Our wagyu petite tender steak is the teres major, a seldom used muscle in the shoulder that is almost as tender as filet mignon. It comes from the chuck section of the cow, right below its front leg, making it a delicious cut of wagyu beef! Unless you are a butcher, chef, or an uber-foodie, you probably haven't heard about this gem that takes a skilled butcher to extract.
Each teres major is shaped like a small tenderloin roast (but with a much richer flavour), and can be grilled, pan-fried, prepared into upscale kebobs, or whatever your creative mind can cook up!
